Lot 349 is a classic "saignee" Rosé. Saignee is the process used by red wine makers where they bleed a small amount of their wine that is presently resting on its skins in order to concentrate the red wine. This wine that is removed from the initial fermentation is a pale pink color and packed with incredible flavors. It makes for a terrific Rosé and in this case, is mostly Cabernet with a little Viognier blended in. It's rounder than a classic French Grenache-based Rosé, yet just as sophisticated and fresh.
