Wine Details

Pretty nose of sweet blossoms and beeswax enveloping apricot and green apple notes. Sexy and sleek on the attack with medium weight on the palate but good persistence in a mouthwatering finish. On par with the ’14, but maybe a touch riper fruit and lower acidity.

Paul Nicolle is firmly rooted in the village of Fleys, a winemaker village in the middle of the vines 4 kilometers from the town of Chablis. The domaine was created in 1979 by Robert Nicolle and Josette Laroche, who can both trace their history from winemaking families in Fleys back to the late 19th century. The grapes are grown on 14 hectares in parcels around the towns of Chablis, Fleys, Chichée and Béru. The wine is made from 25 to 30-year-old vines on Kimmeridgian limestone, and produced entirely in stainless steel where the wine is aged on the lees for 12-18 months before bottling.

At the first sip I found myself immediately thinking poultry. The initial full body was followed by light minerality and quite a bit of acidity on the finish. Next year I will order more of this!

This one surprised me, i loved the crispness that morphed into a nice soft finish. I could be enjoyed with appetizers or fish/poultry. Of course, i just enjoyed it on the patio at sunset.

The Paul Nicole 2015 Chablis "Vieilles Vignes" is a well balanced Chablis, which has enough weight to accompany meats and poultry, as well as lighter dishes. I like it as a cocktail wine because its not too fruit forward. It's just plain delicious.
