Zippy and fresh, the aromas of lemon curd and chalk take on a distinctive seashell character with a little air. Bright and energetic on the palate, with quince and lemon zest flavors supported on a delicate and faceted beam of grapefruit-coated minerality. As with the aromas, the distinctive seashell character soon takes center stage in this beautifully chiseled and crystalline Chardonnay, with a long, pure, mineral finish.

Paul Nicolle is firmly rooted in the village of Fleys, a winemaker village in the middle of the vines 4 kilometers from the town of Chablis. The domaine was created in 1979 by Robert Nicolle and Josette Laroche, who can both trace their history from winemaking families in Fleys back to the late 19th century. The grapes are grown on 14 hectares in parcels around the towns of Chablis, Fleys, Chichée and Béru. The wine is made from 25 to 30-year-old vines on Kimmeridgian limestone, and produced entirely in stainless steel where the wine is aged on the lees for 12-18 months before bottling.
