2005 Spring Mountain Cabernet
Tight nose at this juncture (tasted 7/11/07) with aromas of forest floor, spicy cloves, and black cherry fruit with hints of coffee and cola. Day two (corked overnight 3/4 bottle): Opens up nicely to show black cherry fruit on the nose with strong coffee/mocha underpinning the fruit. On the palate she's extremely broad and deep, showing that same black cherry flavor upfront and finishing long. Monumentally structured with perfect acid-to-tannin ratio, this wine is surprisingly approachable right now but shows a silky tannin structure indicating the patient will be rewarded. This hillside-grown wine needs lots of time as it is only now beginning to show itself.
