Over the last two decades, however, producers and French officials have been further defining the better terroirs of the “Sevre et Maine” region, resulting in the creation of the Côtes de Grandlieu appellation further west, where ancient seabeds of sand, clay and and schist have considerably more Atlantic Ocean influence with acid structures that allow for extended lees ageing not allowed in the "lesser" regions. So, while the traditional Muscadet is lean and fresh, today’s offering takes everything great about Muscadet (the brilliant acidity and saline qualities) and combines it with 30-year-old vines and extended lees ageing to produce a profoundly gorgeous wine. One of the top bottlings from Domaine Les Hautes Noelles, the “Les Granges” bottling comes from a small plateau of low-yielding sand and schist.
