“Les Chevrières” vines are located at the top of the hill in the village of Chaintré, clinging to thin clay soil, rooted in hard limestone stratums. Planted by Dominique Cornin’s father in the 1960’s and a shoe-in for impending Premier Cru status, Les Chevrières is the vineyard that caught my attention cascading down off the Roche de Solutré. One look and you just know the fruit coming out of here has to be phenomenal – it’s basically vines clinging to a hillside of five or six inches of clay on top of hard limestone. Fermented in stainless steel, 2/3 is aged on the lees in barrel, 1/3 in tank, and the result is stupendously good. There were only 300 cases produced of this incredible wine, and we’ve locked down everything that remains - 4 cases!
